When it is cold outside you will appreciate the warmth of this hot bowl of soup and when it is hot, this soup is so good it will have you wishing it were cold so serve it up anytime!
Serves 4
What you will need:
1 large soup bowl
1 large spoon
1 blender
1 cutting knife
Ingredients:
3 heads of broccoli, chopped or one
Medium-sized bag of frozen broccoli
6 cups of water
1 vegetable bouillon cube
1 cup of fresh sprouts
1 chopped onion
3 cloves of garlic
First boil the water on high heat, then lower the heat slightly and add broccoli. Then simmer for 7 min (15 min if the broccoli is frozen). Turn off the heat and add bouillon cube, garlic, and onions. Then put the sprouts in a blender and blend until smooth. Put sprouts into soup and put on medium heat. Cook soup for 30 min to an 1 hour. You may add sage and tarragon to spice things up a bit. Serve in deep bowls and Enjoy! Store the leftovers in the refrigerator for later if desired.
This recipe was written by Gloria who finds Vegetarians’ Delightful Creamy Broccoli Soup very helpful when her grandchildren get sick. “They love it,” she claims, “for many vegetables they turn their little noses up but for Vegetarians’ Delightful Broccoli Soup, once they tried it I found it hard to get them to eat anything else for a while. And it is perfect for those cold days with the flu on the prowl. Children need to eat healthy especially when they are sick!”
